Cheesy Chicken Bacon Avocado Quesadillas

Okay, so Brandon came to me today and told me about this recipe that he wanted me to try. At first I was iffy because I’m not the biggest fan of avocado until now! He wrote on some paper “bacon, chicken, avocado, tortillas”. Simple right? Well of course I had to add a little bit more to the mixture, and it turned out GREAT! So I’m writing this blog to share with all my friends and family this delicious recipe step by step! Here we go-

Brandon’s Cheesy Ranch Chicken Bacon & Avocado Quesadillas!
(Long name, I’ll think of something better later!)

You will need:
• One package of raw chicken tenders (cut into small bite size pieces)
• One package of Colby Jack Shredded Cheese
• One avocado
• One package of Hidden Valley Dips Mix- The original Ranch
• Package of tortillas
• Bacon
• 2Tbs Butter (1 tbs for cooking chicken – 1 tbs for tortillas *possibly more for heating up tortillas)
• Salt & Pepper
• Onion Powder & Garlic Powder


Step 1
After cutting the chicken into small bite size pieces I place them in a Tupperware and added about 1 tsp of salt, 1 tsp of pepper, 1 tsp of garlic powder, 1 tsp of onion powder, and about 2 Tbs of the hidden valley ranch mix. Putting the lid and sealing the Tupperware I let it sit for a few minutes.


Step 2
This step I began cooking my bacon in a small pan untilk fully cooked. Once cooked, I chopped up the bacon into small pieces. During the time the bacon was cooking I cut my avocado into pieces and placed in a smaller Tupperware. Set aside.


Step 3
Clean your pan you cooked the bacon with (I don’t like using a ton of pans and I clean as I go – otherwise just grab another pan). Place 1Tbs of butter in the pan and begin to cook your chicken. Once fully cooked place into a container and clean your pan again.


Step 4
Now that all your ingredients are cooked you can now start assembling your quesadillas! Yay! This is totally simple.
First put a little bit of butter (optional) onto your clean pan and put your first tortilla down to heat up. (I only used one tortilla because I just fold mine over, but you can use two tortillas) then place some of your shredded cheese, chicken, avocado and bacon bits, onto your tortilla! Fold and wait till your cheese is melted and boom. Done.

This was so delicious, super easy, and I’m happy with how it turned out! I will defiantly be making this more often.

My husband and I love to travel. Before having our daughter, we would plan our next trip before our suitcases were even unpacked from the last. I have a travel bucket list about a mile long. There are so many places that I want to see, people I want to meet & foods that I want to taste. I don’t think I will have the time. We were going up until my 3rd trimester when we took an anniversary trip to Iceland.
